an oven.
Raw food means food prepared without heating above 48°C. That is a method, not a diet — and it produces textures and flavours you cannot get any other way. In this lesson you make raw sweets by hand and taste a living-food plate alongside them.
Raw food and living food
Raw food is food that has not been heated above about 48°C. Nuts are soaked rather than roasted; fruit is used as it is; the sweetness comes from dates, maple and unrefined sugars rather than from white sugar. Nothing goes in an oven.
Living food goes one step further and includes what is alive — sprouted grains and seeds, and ferments. At &LAB TOKYO the two sit next to each other deliberately: Japanese koji fermentation on one side, raw preparation on the other. That combination is the reason this school exists, and it is why the sweets taste the way they do.
We are not going to tell you what this will do for your body. We will show you how it is made, and let you taste it.
What you do
- Make raw sweets by hand, from soaking through to finishing
- Learn how ingredients are chosen — which nuts, which sweeteners, and why
- Taste a living-food plate, so you can see how a full dish is built without heat
- See where fermentation comes into it, which is what makes our version different
- Take home what you made
No experience is needed. If you have allergies, tell us when you write — the menus are plant-based and we can usually work around most things.
