My young daughter's burn incident prompted me to deepen my understanding of food, which led me to raw food and fermentation.
Cherishing the warmth of handcrafted work inherited from my grandmother and mother, I want to share the feeling of how food can change your body every day with as many people as possible.
It was with that in mind that we opened &LAB TOKYO.
We are working on the theme of "Living with Living Food, balanced from the cells up."
Through raw food, fermentation and plant-based diets,
We aim to lead you to a lighter mind, body and a more sustainable lifestyle.
This is not just a place to learn cooking,
It's like a laboratory where you can create your future self.
We hope that each person can find eating habits that allow them to shine in their own way.

Through raw food and fermentation, you will learn the art of food that will make you feel youthful from the inside out and lighten the daily lives of your family.
Raw Food
This cooking method preserves enzymes and nutrients by cooking at temperatures below 48°C. Even beginners can learn the basics with confidence.
Hacco LAB (fermentation)
Based on Japan's fermentation culture, this practical program incorporates the power of microorganisms, such as koji making, into everyday life.
Wellness
A lifestyle proposal that focuses on food to improve mind, body, and overall well-being.

I work as an officially recognized creator for ELLE gourmet, producing numerous recipes and original courses.
