What's raw chocolate?
What is raw chocolate?
Typical chocolate is made by harvesting cocoa beans and then going through a process of fermentation, drying, and high-temperature roasting.
The roasting temperature varies depending on the manufacturer and intended use, but it is generally in the range of 110 to 150 degrees Celsius, and can vary greatly depending on the roasting time.
This process brings out the unique, fragrant aroma and flavor of cocoa.
On the other hand, raw chocolate is made using a process that avoids high-temperature roasting and processes the chocolate at the lowest possible temperatures, allowing you to enjoy the natural nutrients of the cocoa without losing much of them.
In Japan, raw materials used in products undergo processes such as low-temperature sterilization to ensure safety.
