Introduction (Thoughts)

"Man is what he eats."

After his young daughter was burned, he began to learn more about food, and eventually discovered raw food and fermentation.

Cherishing the warmth of handcrafts inherited from my grandmother and mother, I want to share with many people the realization that their bodies can change through the food they eat every day.

With this in mind, we opened &LAB TOKYO.

Through raw food and fermentation, you will learn the art of eating that will make you feel young from the inside out and make your family's daily lives lighter.

What you'll learn

・Raw Food

A diet method that utilizes enzymes and nutrients by cooking food at temperatures below 48°C. Even beginners can learn the basics with confidence.

・Hacco LAB (Fermentation)

A practical program based on Japanese fermentation culture that incorporates the power of microorganisms into daily life, such as making koji.

・Wellness

We propose a lifestyle that starts with food and balances the mind, body, and life as a whole.

A. Yes. We will carefully support you from the basics, from how to hold a knife to choosing the right tools.

Q. Can I bring my children with me?

A. You can accompany your child to some courses. For safety reasons, please check the applicable courses in advance.

Q. Can I learn online?

A. Yes. The course is designed to be easy to review by combining live attendance and recordings.
